Simple Marinade (For 2 Chicken Breasts)

Ideal for pita, salad, or chopped dishes

Flavor: Mediterranean-ish and bright — great warm or cold.

- 1/4 to 1/2 tsp salt (or none, if watching strictly)
- 1 tbsp olive oil
- 1 tbsp lemon juice (or white wine vinegar)
- 1 garlic clove, minced (or 1/4 tsp garlic powder)
- 1/2 tsp dried oregano (or mixed Italian herbs)
- Cracked pepper to taste

Optional:

- 1 tsp Dijon mustard or 1 tbsp plain yogurt (extra tang & tenderness)

 Prepare:

  1. Toss the chicken breasts in the marinade, coat well.
  2. Rest for at least 30 min, up to 4 hours.
  3. Bake at 400°F (200°C) for ~20–22 minutes, depending on thickness.
  4. Let rest, then slice thin or cube.

Serving Suggestions (Choose & mix!)

1. Pita Fillings:
  • Hummus or tzatziki
  • Sliced cucumber + tomato
  • Shredded lettuce or arugula
  • Crumbled feta (if salt allows)
  • Pickled onions or olives (sparingly)

2. Salad Companions:
  • Quinoa or couscous base
  • Roasted chickpeas or beans
  • Fresh herbs: parsley, mint, basil
  • Squeeze of lemon + drizzle of olive oil

3. Bonus Options:
  • Rice bowl with grilled veggies
  • Wrap with avocado & slaw
  • Tossed in a chilled pasta salad
