When you really just don't want to cook, but still require supper
Black bean cheese melt filling
If you use a food processor to mash there will be more dishes.
So fair trade IMHO is skip the cooking, but then you will miss the small bit of onion and garlic releasing their very essence to the beans... Hmmm...
Mash together:
1 to 1½ cups black beans
1–2 tbsp finely diced onion
1 small garlic clove, minced
1 tbsp lime juice, or your 1/4 lime
1/2 tsp cumin
1/2 tsp dried roasted garlic & peppes
dash of oil
Freah is best: cilantro and parsley
Heat it in a pan for 3–5 minutes. Add a splash of water if it looks dry.
Then use it as:
quesadilla filling + shredded cheese
toast topping + cheese
rice bowl topping
baked potato topping
wrap fillingIf using tortillas: spread filling, add cheese, fold, crisp in a pan. Done.
If you have rice: black bean lime rice bowl
Yum, dinner.
1 cup black beans
1 cup cooked rice
Onion + garlic, sautéed
Cumin
Chili powder
Lime
Cilantro
Cheese if desiredWarm everything together in a pan with a splash of water or broth. Finish with lime and herbs. This is the “I refuse to cook but still require supper” bowl.
If you have eggs: black bean scramble
Very good. Very low effort.
Sauté onion and garlic, add 1 cup black beans, cumin, chili powder, salt, pepper. Mash some of the beans. Add eggs and scramble. Finish with cilantro/lime. Cheese optional.
If you have pasta: creamy-ish black bean pasta
Strange but workable little pantry goblin.
Mash 1 cup black beans with garlic, butter or oil, a splash of pasta water, cumin, pepper, and cheese. Toss with pasta. Add lime at the end, not too much. Herbs on top.
Black bean and corn casserole
A simple and flavorful black bean and corn casserole that’s quick to prepare.
Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup shredded cheese
- 1/2 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Spread the mixture in a baking dish.
- Sprinkle shredded cheese on top.
- Bake for 20 minutes or until cheese melts.
- Serve warm.
Notes
- You can add diced bell peppers or onions for extra flavor.
