
I discovered Pattypan squash at the market on Saturday. I want to remember this!
They were fresh and delicious :)
You know it's a recipe for August when even the garlic isn't cooked. This is all so fresh and yummy.
Ingredients
Marinade for veggies
- ¼ cup extra-virgin olive oil
- fresh clove of garlic chopped
- ½ cup chopped fresh basil
- salt and ground black pepper to taste (op)
Summer quash
- a variety of zucchini, or summer squash like Pattypan, sliced into thin rounds, about two cups
- 1/2 fresh tomato, sliced and then cut again. You can certainly use a whole tomato!
- previously made fresh linguine pasta
- ½ cup ricotta cheese, or fresh mozzarella fresca, divided
- ½ cup chopped fresh basil
- maybe some parsley would be nice
Directions

Whisk olive oil, garlic, basil in a large bowl. Add summer squash and tomatoes to the oil mixture and toss to coat.

If you already made the pasta skip to step 4.

Bring a large pot of lightly salted water to a boil. Cook the linguine at a boil until tender yet firm to the bite, about 5 to 10 minutes; drain. Transfer pasta to a serving bowl.

Mix the pasta with the salad and serve. It can be topped with extra cheese for presentation, but I mixed everything up in the bowl. That marinade was wonderful
