Split Breast of Chicken with Roasted Carrots and Potatoes
The bonus of using breast meat on the bone is that the meat will retain more moisture as it cooks. If the breasts alone are not on sale, go for a whole fryer chicken and remove the breasts yourself.

Ingredients
3 - 4 chicken breasts (with skin, on the bone)
4 - 5 cloves of garlic, minced
2 tablespoon olive oil
1 1/2 teaspoon salt
1 sprig rosemary (free from my garden!)
fresh cracked black pepper
2 red potatoes, quartered
4 carrots, peeled
2 one inch wide slices of onion
