đ„ Ingredients:

1 cup pre-cooked maize flour (instant polenta flour)

2ω3 cups homemade broth (veggie or chicken)

2 tbsp butter
-
œ cup shredded cheese (optional, but I used Monterey Jack w jalapenos â amazing)

1 egg (optional â gives it more âbreadâ structure)

đ„Ł Directions:

Preheat oven to 375°F (190°C).

Whisk & cook the polenta base:
In a saucepan, bring water or broth + salt to a boil. Slowly whisk in the maize flour. Stir constantly until it thickens (3â5 mins). -
Stir in butter, cheese, and optional egg.
Let it cool a minute before adding the egg so it doesnât scramble. Mix well. -
Pour into buttered 8x8 pan

Bake for 25â30 mins, until the top is lightly golden and it pulls slightly from the edges.
You can broil the top for a minute at the end for crispiness. -
Let cool slightly, slice, and serve!

Add chili flakes, sautéed onions, or chopped herbs before baking.

Top with extra cheese or drizzle with olive oil before serving.
