đŸ„„ Ingredients:

  • 1 cup pre-cooked maize flour (instant polenta flour)

  • 2œ–3 cups homemade broth (veggie or chicken)

  • 2 tbsp butter

  • œ cup shredded cheese (optional, but I used Monterey Jack w jalapenos – amazing)

  • 1 egg (optional – gives it more “bread” structure)

     

    đŸ„Ł Directions:

  1. Preheat oven to 375°F (190°C).

  2. Whisk & cook the polenta base:
    In a saucepan, bring water or broth + salt to a boil. Slowly whisk in the maize flour. Stir constantly until it thickens (3–5 mins).

  3. Stir in butter, cheese, and optional egg.
    Let it cool a minute before adding the egg so it doesn’t scramble. Mix well.

  4. Pour into buttered 8x8 pan

  5. Bake for 25–30 mins, until the top is lightly golden and it pulls slightly from the edges.
    You can broil the top for a minute at the end for crispiness.

  6. Let cool slightly, slice, and serve!

 🧀 How do you like it?:

  • Add chili flakes, sautĂ©ed onions, or chopped herbs before baking.

  • Top with extra cheese or drizzle with olive oil before serving.
