Prep time: 10 mins | Cook time: 8 mins | Servings: 1-2

A high-energy, spicy stir-fry designed to rescue leftover rice, beans, and broccoli from the fridge and turn them into a premium, crunchy meal.

Ingredients

  • Aromatics: 1 tbsp fresh ginger (minced), 1 garlic clove (minced), ½ jalapeño (minced).
  • Veggie: 1 cup broccoli (chopped).
  • Legumes: 1 cup black beans (rinsed/drained), ½ cup seasoned chickpeas.
  • Grain: 1 cup leftover cold rice.
  • Sauce: 1.5 tbsp soy sauce, 1 tbsp chili garlic sauce, 1 tsp rice vinegar.
  • Garnish: 2 tbsp peanuts (roughly chopped), sesame seeds, fresh cilantro (chopped), green onions (chopped), remaining ½ jalapeño (sliced).
  • Cooking Oil: 1 tbsp high-heat oil (canola, vegetable, or sesame).

Instructions

  1. Prep Everything: Group your ingredients into separate bowls before turning on the heat. This moves fast!
  2. Blast Aromatics: Heat oil in a large skillet or wok over high heat. Dump in the minced ginger, garlic, and minced jalapeño. Stir furiously for 30 seconds.
  3. Toss Broccoli: Add the broccoli. Stir-fry for 3 minutes until vibrant green and slightly tender.
  4. Sauce the Beans: Add the black beans and chickpeas. Pour the mixed sauce ingredients directly over them. Stir for 1 minute.
  5. Crisp the Rice: Add the cold rice, breaking up any clumps with your spatula. Stir-fry aggressively for 3 minutes until piping hot.
  6. The Fresh Finish: Kill the heat. Fold in most of the green onions and cilantro.
  7. Garnish: Plate up and pile on the chopped peanuts, sesame seeds, remaining herbs, and jalapeño slices.
