Ingredients

  • 1/2 t. dried rosemary
  • 1/2 t. dried thyme
  • 1/2 t. dried paprika
  • 2 fresh salmon filets
  • 1/2 T. dijon mustard
  • 1/2 head of cauliflower, cut into bite-sized florets
  • 1/2 T. olive oil

Instructions

preheat the oven to 425° F. 

  1. in a small bowl, combine the rosemary, thyme, and paprika.
  2. spread the salmon out on one side of the sheet pan (skin side down, if there is a skin side). coat the top side of each salmon fillet with the mustard. sprinkle half of the spice rub over the salmon.
  3. spread the cauliflower out in a single layer on the rest of the baking sheet. toss to coat with the olive oil and then the remaining spice rub.
  4. roast the cauliflower and salmon for 17 - 20 minutes, the cauliflower should be golden brown and the stalk should be easy to pierce with a sharp knife.
  5. serve immediately.
  6. save leftover salmon and cauliflower for a lunchtime clean-out-the-fridge buddha bowl. especially with lemony basil pesto.
