One-Pan Salmon with Broccoli & Cauliflower

🔪 Instructions
- Preheat oven to \~400°F (about 200°C).
- Prepare vegetables: Place broccoli and cauliflower florets on a rimmed baking sheet or in a large baking dish. Drizzle with olive oil, season with salt & pepper. Toss to coat evenly.
- Add salmon: Place salmon fillets on the same pan, among the vegetables. Brush salmon with lemon juice, and season (salt, pepper, perhaps garlic or herbs).
- Add lemon slices: Place a few lemon slices around or on top of salmon / veggies for extra citrus flavor.
- Roast: Bake in the oven until salmon is cooked through (flakes easily with a fork) and vegetables are tender and slightly roasted — typically 12-20 minutes, depending on thickness.
- Serve: Remove from oven, squeeze extra lemon juice if desired. Serve salmon alongside roasted broccoli & cauliflower.

- Cut vegetables into uniform pieces so everything cooks evenly.

- Swap or add vegetables like asparagus or carrots if you like.
